Simple Red Chicken Curry
This was tonight's dinner.

This is my first recipe post. I am the type of cook that likes to add a dash of this, a pinch of that and I tend to not write down the recipe. Also, I am working on my photography skills. So bear with me as I learn some new skills! :)
As a busy mom of two, many nights I try to keep the meals clean and simple. This is a very simple curry with few ingredients. You can serve it on its own, with rice, or cauliflower rice.
Simple Red Chicken Curry
Servings 4
Ingredients:
1 Tbsp Coconut Oil
2 Yellow Onions
3-4 Assorted Peppers (Red, Orange, Yellow)2 Chicken Breasts
​1 Can Coconut Milk (I use 365 Everyday Value Organic Coconut Milk - it is organic, a great price and has the most cream)
​2 Tbsp Red Curry Paste
Directions:
1. In a large frying pan over medium heat, melt the coconut oil.2. Chop up onion and add it to the pan, cook until translucent.3. Chop up the red pepper and add it to the pan. Cook until it just starts to get soft.4. Cut up the chicken into cubes, set aside.5. Add the red curry paste and stir well. Add the chicken. Cook for 5 minutes or so.6. Add the coconut milk, stir well. Reduce to medium-low heat and simmer until cooked thoroughly. 7. Serve by itself, over cauliflower rice or rice and enjoy
