Ever get a craving for lemon or citrusy food! There is something about the freshness of lemon in baked goods that make me happy. :)




Check out these simple Gluten Free, Dairy Free, Vegan, Refined Free Lemon Poppy seed Muffins. I think they will check all the boxes :)


Lemon Poppy Seed Muffins

Makes 12 Muffins


2 cups Bob's Red Mill Gluten Free All-Purpose Flour

1/2 cup Organic Coconut Sugar

1 Tbsp. Gluten Free Baking Powder

1/2 tsp Xanthan Gum

1/2 tsp Sea Salt

3/4 cup Unsweetened Soy Milk or Other Non Dairy Milk

1/2 cup Avocado Oil

1/4 cup Unsweetened Organic Apple Sauce

10 drops of a Food Grade Lemon Essential Oil - I use this one. Make sure it is a food grade oil, not all oils are created equal!

2 tsp Real Vanilla Extract

1/3 cup Poppy Seeds


Directions:


Preheat the oven to 400 degrees Fahrenheit and line a 12 - cup muffin tin with paper liners.


In a large bowl, combine all the dry ingredients (except the poppy seeds) and mix until it is well combined.


Add the wet ingredients to the dry mixture and mix it well.


Let the batter sit for 5-10 minutes.


Scoop the batter evenly into the muffin cups. Approximately 1/3 cup of batter in each muffin cup.


Bake for 20-25 minutes. Until a toothpick is inserted in comes out clean.


Let them cool, and enjoy!
